Roasted Salsa Verde.

Ingredients:
  • 10 tomatillos.
  • 3 garlic cloves.
  • 2 habanero Chiles (3 if you like it very spicy).
  • ½ large onion.
  • 5 sage leaves
  • ½ shot tequila reposado
  • ½ cup cilantro leaves.

  • (Difficulty : easy)
    Procedure.
    Preheat Oven at 370 F. In a dark non-stick baking tray, put tomatillos, garlic cloves, habanero and onion and bake it for 20 minutes. For a nice look, you can broil it after to give it a "burnt appeal".
    Reserve after baking and let it cool, then put everything into a blender, including the rest of the ingredients, and chop it pulsing periodically, so texture will be chunky.
    This salsa is great for carne asada tacos or even for dipping if you love spicy food.
